Handpicked and crushed into press where we held it for several hours to increase colour and texture, settled overnight, then racked to old barrels, with lots of solids. Half seeded immediately with the CY3079 yeast and half left to ferment naturally. No MLF. The wine saw only minimal SO2 just prior to bottling in December.
